Posting before class!!!! - Question about cameras

No, this is not a newsworthy item ... but I am actually able to take 15 minutes and check Blogger before class. On a campus computer. That does NOT happen very often.  :-)

I have a random question for those of you who have nice cameras and use them a lot. I would like to buy a new digital camera, something more than a point-and-shoot; something that takes good, blog-quality photos that are true to color, is sensitive to low light levels, and is easy to learn how to use (including the custom settings that allow me to change depth of field and so on), but is <i>not</i> really expensive. What brand/model of camera would you recommend?

I have a Nikon right now, but its photos have a kind of yellowish cast in every light except full-on natural sunlight, and I can't adjust the depth of field or do anything beyond take snapshots. I know someone who has a Canon and really likes it, but again, it's mostly just a point-and-shoot.

I don't know how to use more advanced settings, but I'd like to learn, and I'd like a camera that will make it somewhat simple for me.  :-)  I don't have much time to write much on my blog, but I see lots of stuff every day that would make great photo posts, if I only had a nice camera; and that's my goal. Do any of you have any suggestions?
